Perfect General's Chicken

I LOVE a plate of Genera Tso's chicken! I've tried a few recipes and, after tweaking a few, came up with my family's new favorite recipe. This is a fantastic dish, especially with the addition of sesame oil.

Sauce Ingredients:
1/2 cup cornstarch
1.2 cup water

1/2 cup soy sauce
1 tablespoon garlic salt
2 teaspoons ground ginger
2 teaspoons cayenne pepper seeds
1/4 cup red wine vinegar
1/4 cup sherry
1 1/4 cup sugar
1 cup water
1 chicken bullion cube
2 teaspoons sesame oil (optional)

Chicken:
3 lbs boneless chicken breasts or thighs, cut into 1 inch chunks
1/2 cup soy sauce
1 egg
1/3 cup cornstarch
1/3 cup flour

For sauce:
mix the 1/2 cup cornstarch and 1/2 cup of water in a bowl and set aside.
Starting with the water and bullion, put remaining ingredients in a saucepan and whisk until almost boiling; stir in cornstarch mixture. Continue to mix with a whisk until it is almost thick enough and remove from heat.
 For Chicken:
Combine all chicken ingredients in a large bowl. Fry small batches in hot oil ( I prefer peanut) until done and lightly brown. Put done chicken into a baking dish or glass bowl as you continue to cook remaining batches.
 When chicken is ALL done cover reheat the sauce and allow to thicken a bit more. Pour hot sauce over chicken and stir to coat.
 I like to bake my rice while preparing the rest of the meal. To bake perfect rice put double the amount of water as rice into a 9x13 baking dish. Add 1-2 tablespoons olive oil and some salt. Cover with foil and bake at 400 degrees, 25 minutes for white rice or 45-55 minutes for brown.
